General information Ammonium bicarbonate is a white crystal substance with a distinct slight aroma of ammonium and in life it’s called ammonia soda. When heated it dissolved and releases HO and ammonia. That’s why it’s used as a leavening in confectionary. It’s also used as a fire extinguisher, for wood impregnation and for other technical purposes.
For application in the food industry, ammonium bicarbonate is offered with or without antifouling ingredient and is marked as E 503(ii) as a food supplement.
Ammonium bicarbonate is usually used in various industrial processes and products with an anti-caking additive, which ensures a longer, trouble-free storage of the product before use.
